Hi Friends! How is everyone doing? Happy Sunday! The weather was so beautiful here today and has made me excited for Spring.

Today I am sharing 2 of my favorite weeknight dinner recipes Sam and I make. They are easy, affordable, and quick. What more could you want?

Up first, Chicken Fajita Soup. If you follow me on Instagram, @adoseofabbyj, you see me share this often. We sometimes make this in the crockpot or throw it on the stove when we get home from work. It is the easiest and most delicious soup you can whip up.

  • Ingredients
    • 2 lbs Chicken Breast
    • 1 Onion, Chopped
    • 1 Green Pepper, Chopped
    • 3 Garlic Cloves, Minced
    • 1 tbsp Butter
    • 6 oz Cream Cheese
    • 2 10 oz Cans Diced Tomatoes w/ Green Chilies
    • 2 1/2 cup Chicken Broth
    • 1/2 cup Heavy Whipping Cream
    • 2 1/2 tbsp Taco Seasoning
  • Instructions
    • Cook chicken breast and shred. Set aside.
    • In a large saucepan, saute green pepper, onion, garlic, and butter until translucent.
    • With a spoon, mash cream cheese into veggies so that it combines smoothly as it melts.
    • Add canned tomatoes, chicken broth, heavy whipping cream, and taco seasoning.
    • Simmer on low uncovered, 20 minutes.
    • Add chicken, cover, simmer 10 minutes.
    • Enjoy hot. Top bowl with cheese, avocados, sour cream, and/or green onions.

Up next, Chicken teriyaki hibachi. We love this for dinner but it also makes a great meal prep for your weeks lunches.

  • Ingredients
    • 1 1/2- 2 lbs Chicken Breast
    • 2 tbsp PF Changs Teriyaki Sauce
    • 2 cups Jasmine or White Rice
    • 3 tbsp soy sauce
    • 1 tbsp sesame oil
    • 1/2 tbsp Butter
    • 1 tbsp Garlic, Minced
    • 2 Eggs
    • 1 Zucchini
    • 1/2 Onion, Chopped
    • Salt & Pepper to Taste
  • Instructions
    • Chop chicken and cook with salt and pepper to taste.
    • Once cooked, toss in teriyaki sauce and set aside.
    • Toss onion and zucchini in butter and cook till translucent, set aside.
    • Cook rice. Add soy sauce, butter, and garlic. Push to side of pan.
    • In same saucepan, fry the eggs and chop. Mix in with Rice.
    • Serve bed of rice with chicken and veggies over top.
    • Top with sesame seeds, enjoy.
